I cut out recipes from magazines that look good and save them in a folder in the kitchen. Does anyone else still do this? I haven't been able to stop this habit, even though I know I could search online for recipes.
This recipe from Cooking Light I saved from 1997 and just made it for the first time recently. The sad thing is that I'm not sure that's a record for me. I have recipes I've saved from Seventeen magazine and let's just say it's been a long time since I was 17.
I bake quite a bit, but usually cookies or banana bread. The few times I've tried to make cakes they've gone straight from the oven to the trash. This Cinnamon-Apple Cake is an exception. I used the 9-inch springform pan (listed in the "note" section of the recipe) and I used Braeburn apples instead of the Rome apples suggested, but otherwise I stuck to the recipe. This cake tastes especially good warm.
The one major problem with this recipe? I should know better than to make such a scrumptious cake—no matter how "light"—when I don't have at least a dozen people to feed. Why couldn't I have waited for a brunch, book club, or another gathering? I can hear the cake calling my name down the hall. Am I sure I don't want another piece?
